Sausage, Peppers, and Potatoes
Ingredients
1 lb. | potatoes |
~1-2 tbsp. | olive oil |
~1 tbsp. | salt |
~1 tsp. | paprika |
1 lb. | italian sausage1 |
2 | bell peppers |
1 | onion |
Directions
Put a large pot of salted water on high heat to boil. Stir in ~1 tsp. of baking soda per gallon of water. This will make the water alkaline, helping break down the potatoes.
Cut your potatoes up into bite sized chunks. Add them to the water once it has boiled and cook for ~8-10 minutes, then drain.
Preheat your oven to 450° F. Add the potatoes, olive oil, and salt into a large mixing bowl and toss, roughly, until the oil and salt are well distributed and the exterior of the potatoes look slightly mashed. Spread the potatoes on a baking dish and bake for ~20 min. In the mean time, cut your bell peppers into long strips. Sprinkle a pinch of salt and some paprika over them and let sit.
Once 20 min. is up, pull out the potatoes and, using a sturdy spatula, scrape them up off the bottom of the pan and flip them. Break the sausage up into small chunks and layer it on top of and in between the potatoes. Layer your strips of bell pepper on top of the potatoes and sausage. Bake for another 20 min. or so, until the sausage is fully cooked and the bell peppers are soft.
Notes
- If you can’t or prefer not to eat red meat, I have found you can substitue in ground turkey. Just mix the turkey with 1tsp. ground fennel, 2 tsp. Italian seasoning, ½ tsp. salt, and ½ tsp. pepper. You can add some red pepper flakes or cayenne pepper if you prefer your sausage spicy.
